- For the Dough
1 package (2 1/4 teaspoons) active dry yeast
1 teaspoon sugar
3/4 cup warm water
2 cups all-purpose flour
1 teaspoon salt

- For the Pizza Toppings
1 cup baby spinach, washed and dried
1 cup artichoke hearts, drained and sliced
1/2 cup sun-dried tomatoes, rehydrated and sliced
1/2 cup Kalamata olives, sliced
1/4 cup pine nuts
1 cup vegan mozzarella cheese, shredded
Olive oil for drizzling
- For the Pizza Sauce
1 can (14 ounces) crushed tomatoes
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
Directions
- Prepare the Pizza Dough:
a. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until it becomes frothy.
b. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
c. Mix until the dough comes together, then knead on a floured surface for about 5 minutes until smooth.
d. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size. - Preheat the Oven:
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating. - Prepare the Pizza Sauce:
In a bowl, mix together the crushed tomatoes, minced garlic, oregano, basil, salt, and black pepper. Set aside. - Roll Out the Dough:
On a floured surface, roll out the pizza dough to your desired thickness. - Assemble the Pizza:
a. Spread a layer of the prepared pizza sauce over the rolled-out dough.
b. Sprinkle vegan mozzarella cheese evenly over the sauce.
c. Distribute baby spinach, artichoke hearts, sun-dried tomatoes, Kalamata olives, and pine nuts over the cheese. - Bake the Pizza:
If you have a pizza stone, carefully transfer the rolled-out dough onto a pizza peel or an inverted baking sheet dusted with flour or cornmeal. Then, slide it onto the preheated stone in the oven. Alternatively, you can bake the pizza on a regular baking sheet. - Bake for about 12-15 minutes or until the crust is golden brown, and the toppings are heated through.
- Serve:
